Ingredients

cans of kidney beans
or any beans you prefer

can of diced tomatoes

onion
diced

cloves
garlic
minced

bell pepper
diced

chili powder

cumin
Salt and pepper to taste

olive oil
Instructions
Heat the olive oil in a large pot over medium heat.
Add the onions and bell peppers, cooking until soft.
Add the garlic, chili powder, and cumin, cooking for another 1-2 minutes.
Stir in the beans and diced tomatoes (with juice), and simmer for 20 minutes.
Adjust seasonings as needed and serve hot.
Notes
Add a dollop of sour cream or shredded cheese for extra flavor.
For a meatier option, add ground beef or turkey.
