1 ½cupsshredded cheddar cheeseplus extra for topping
½tspDijon mustard

Instructions
Preheat the oven to 375°F (190°C).
Steam the cauliflower florets for 8-10 minutes until tender. Drain and set aside.
In a saucepan, melt butter over medium heat. Stir in the flour and cook for 1-2 minutes to form a roux.
Gradually whisk in the milk and cook until the sauce thickens.
Stir in the cheese, mustard, salt, and pepper until smooth and creamy.
Arrange the cauliflower in a baking dish, pour over the cheese sauce, and sprinkle extra cheese on top.
Bake for 20 minutes or until golden and bubbling.
