Instructions
Step 1: Toast the Pecans
Preheat your oven to 350°F (175°C).
Spread the pecans on a baking sheet and toast them for 8-10 minutes, until they’re fragrant and slightly browned.
Let them cool, then chop them roughly.
Step 2: Prepare the Infusion Jar
In a large glass jar, combine the toasted pecans, cinnamon stick, vanilla bean, chili powder, and brown sugar.
Pour the bourbon over the top, making sure everything is submerged.
Seal the jar tightly and give it a good shake.
Step 3: Let It Infuse
Store the jar in a cool, dark place for 7-10 days. Shake it gently every day to mix the flavors.
After a week, taste the bourbon. If it’s strong enough for you, strain out the solids using a fine mesh strainer or cheesecloth.
Pour the infused bourbon back into the bottle or a clean jar.
