large potatoes
peeled and boiled

Instructions
Step 1: Prepare the Potatoes
Peel the potatoes and cut them into chunks.
Boil them in salted water until they’re soft (about 15-20 minutes).
Drain the water and mash the potatoes until they’re smooth.
Add 1 egg, salt, and pepper to the mashed potatoes. Mix well and set aside.
Heat oil in a pan over medium heat.
Add the chopped onion and garlic. Cook until they’re soft and fragrant.
Add the ground beef and cook until it’s browned.
Stir in the cumin, paprika, chili powder, salt, and pepper. Cook for another 5 minutes.
Add the chopped hard-boiled egg and mix well. Let the filling cool.
Step 3: Shape the Papas Rellenas
Take a small handful of the mashed potato mixture and flatten it in your hand.
Add a spoonful of the beef filling in the center.
Carefully wrap the potato around the filling, shaping it into a ball or oval. Repeat until all the mixture is used.
Notes
Add cheese for a creamy filling.
Use chicken for a lighter version.
Add cumin for an extra flavor boost.
